Tropical Pepper Co. Scotch Bonnet Sauce
The scotch bonnet is a variety of chile, similar to the habanero, in both looks and heat, but this pepper is native to the Caribbean, whereas the hab grows throughout Latin and North America. On the Scoville scale of pepper heat, scotch bonnets are not quite as hot as habaneros, but with a heat rating of up to 325,000 Scoville Units, you will certainly feel a very similar burning sensation! Mix with maple syrup and scallions and pour over split chicken. Marinate overnight and then cook for about an hour and a half at a medium heat and you'll be bringing a bit of voodoo magic to the table!
